Apple Cinnamon Muffins



Who doesn't like muffins? Not anyone in my family. We all love them. Recently, I baked some Apple Cinnamon Muffins. On a scale from 1 to 5. These are a 5.
Here is the recipe :

Apple Cinnamon Muffins

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/3 cup vegetable oil
1 egg
1/3 cup milk
2 apples - peeled, cored and chopped
1/2 cup white sugar
1/3 cup all-purpose flour
1/2 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Preheat oven to 400 degrees. Grease six muffin cups. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling about half way. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

Crockpot Red Beans and Rice Recipe

I created this recipe using ingredients I had in my kitchen. I created it with a thought in mind. I did not follow any recipe. This is my own creation. If you try it, please let me know what you think? 

This was a big hit with my family, neighbors and friends. As I made a full crock pot, I had plenty to share. This is also one dish that taste better the longer it cooks. As I had it the next day after making it. Still in the crockpot cooking on warm. It tasted better the second time around. This will be one meal I will make in the future. Do you like red beans and rice? How do you like to prepare it?

Here's the recipe :

Red Beans and Rice With Spinach
~~~~~~~~~~~~~~~~~~~~~~~~~~~~
1 pkg of red beans
1 pkg of white rice
1 jar of salsa 
1 large onion chopped
2 cups of fresh spinach chopped

Spices to taste : 

Sea Salt
Pepper 
Butter
Old bay Seasoning
Garlic powder
Seasoning salt

Directions

Prepare red beans and rice per the directions on the package. Place in crockpot. Add salsa, chopped onion and spinach. Mix well. Add spices. Cook for 3 - 4 hours on high.

Persona paper - Writing Site



I signed up for another writing site about 6 months ago or so. Like I promised, I am sharing the link if the site is still up, running, and paying members. 

The admins are right on helping out if they see you made a mistake. That way you have a chance to correct it. The membership is low. But growing strong. 

The members are very friendly. 

Make sure you read the rules, terms of service and site privacy policy before posting. As with all sites, not all run the same.

The one thing I noticed about this site I really like. When sharing a photo not your own, one from a free sharing site. You must share the url link of the photo in full. If it is yours, you must say mine in that area. Otherwise your post will not go through.

Outside Christmas Lights

One of my favorite traditions around Christmas time is going around the neighborhood and checking out all the outside Christmas lights.
If I am lucky I am able to go around to surrounding cities to check out the outside Christmas lights. That doesn't always happen. Sometimes it is due to not having enough gas, the weather conditions, or not knowing where the outside Christmas lights are displayed at.

Tree Topper


I look at my tiny Christmas tree sitting on my kitchen table. It has Christmas lights already strung around. Other than that it has no decorations on it.
I received this tree after all my Christmas items were ruined in the last place I lived in due to a leak where my Christmas items were stored. By time I noticed it, all were lost. I cried.
Many years were spent collecting and saving to add to to the Christmas tree. On top I always placed an angel.
I choose an angel over a star. As the angels were the ones that alerted the three wise men about baby Jesus's birth. The star led the way.
One day I wish to have regular size Christmas tree again with all the trimmings.

Spelling Christmas



took up a challenge to where you choose a Christmas word to describe Christmas and to spell out the word Christmas.
 C - Cookie : Many delicious cookies are made and eaten during the holiday seasons.
H - Hug : People tend to hug more often during the holiday season.
R - Red : My favorite color. The color of Santa suit and the Rudolph's nose.
I - Icicle : I pray for a white Christmas with icicles hanging from the rooftops.
S - Scrooge : I feel like being a scrooge to my awful acting kids.
T - Tradition : I have many Christmas traditions.
M - Mince Pie : Does anyone make mince pies anymore for Christmas? I haven't had one since before my grandmothers passed away.
A - Astounded : I am in astounded how others can be so hateful towards those who are needy this time of year.
S - Scam : People standing asking for cash for help are scamming others in my area. The same people with nice cars only come out around the holidays. Even using their kids to scam others out of their hard earned money.

Candy Canes

The first candy cane I ever had was flavored peppermint. I remember peppermint being the only flavor as I was growing up.
I was able to get these when I was spending time at my mother's. Not at my dad and stepmothers, as my dad is allergic to peppermint. Anything mint was not allowed in the house because an allergic reaction could occur.
I learnt if I recieved anything mint in school. To eat it there or give it away. I would first try to trade another child for something chocolate. As I favored chocolate for candy. Many times I would wind up with an orange as a trade. As kids did not want to give up their chocolate so easily.
As I grew older, the candy cane makers started coming up with new and different flavors. I loved trying the new flavors. 

Til this day when a new flavor comes out of candy canes I must try them.

No Stockings this year


I provide stockings every year for my children. I fill them up with things I can pick up from the dollar tree.
Such as : toothbrush, toothpaste, hair bows for my daughter, wash cloth rolled up, Christmas them pencil and other things of nature. Before I fill them with candy.
This year I am awaiting a child support check. I do not have the money to keep buying new stockings each year because the teens either throw their out or lose it.
Either way they do not gives their back to me to put up the seasonal Christmas items.
I think I will forego the stockings to see if I can teach my teens a lesson.

Favorite Christmas Song

One of my favorite Christmas songs has always been the "Little Drummer Boy." I first heard the song when I attended a Lutheran church with my stepmother and father. It was a song that was sung around the holidays in Sunday school before we were sent to classrooms.
After, I grew older I learned a little more about the song. Such as it was created in 1941 by a Katherine Kennicott Davis.
The song is about a poor boy who was invited to play his drum as a gift for the newborn infant Jesus Christ.
Many different artist have sung the song since it was first created. I was able to find a video on YouTube for those who are unfamiliar with it.

Christmas Shopping


I am not feeling very well. I awoke late last night because my GERD was bothering me really really bad. Yes, I puked like a running faucet. Afterwards I couldn't sleep. So, I watched "Snow Piercer" on Netflix. I was able to fall asleep for a bit. I woke up off and on all day puking my guts out.
I finally got up around 5:30pm. I was able to get a three day supply of my daughters medicine. I can pick the rest up tomorrow.
I was able to get most of my Christmas shopping. I have to love Wal-mart for having brands and items my kids like. I also picked up a planner for my boyfriend and my self for the upcoming year. Both of us have been forgetting to many things lately. A planner had become a necessary item. Not a want anymore.
I still don't feel very well. I think my boyfriend and I are both coming down with something. His would be bronchitis. Me, probably probably some annoying flu bug. Always comes on slow then hits me hard.
