Homemade Breakfast Tacos


Tacos for breakfast is food my family has been eating. Long before Taco Bell started serving breakfast. I make a breakfast taco that taste nothing like a normal taco. 

Tacos for breakfast can be in many different ways. The ingredients varies depending on what part of the world you are living at.


I decided to make Breakfast tacos today with a little twist - Spinach. Yes, I added something healthy to my family's breakfast tacos this morning.

HOMEMADE BREAKFAST TACO'S

Ingredients :
1 cup of fresh mushrooms
1 cup of chopped spinach
1/2 cup of blue cheese
6 eggs
6 soft tortillas
6 slices of turkey

Topping:
Mexican cheese or cheddar cheese

Instructions :
In a sauce pan, sautee the mushrooms, turkey and spinach in olive oil. When done set aside. Add blue cheese. Mix and let set. The cheese will melt while you are getting the eggs ready.

In a bowl crack open six eggs. Whisk till they are thoroughly scrambled. Add to a pan with a little olive oil. When eggs are starting to cool, getting mixing together to get the scrambled look. When eggs are half ways done. Add in the other ingredients you set aside. Mix together till it is completely cooked.
Spoon in to a soft tortilla. Top with Mexican blend or Cheddar shredded cheese.

Options : 
You can use butter instead of olive oil for more flavor. Olive oil makes the dish a little healthier than using butter. 

You can also sprinkle a little sea salt for extra flavoring. I did not. I allowed each individual to do that.

You can substitute luncheon meat or use real turkey. If using real turkey. Only use 1 cup. Otherwise slice up the turkey. 

This dish made enough for three people to eat two tacos a piece. A total of six tacos were made.

  1. I love to do breakfast burritos with a lot of the same ingredients. We usually try to add a little sausage if we have some on hand, and I like celery and bell peppers in mine too.

    1. I love to add more veggies in my breakfast tacos when I get a chance. I must avoid onions, bell peppers and tomatoes. I never thought of adding celery. I should try that next time. I do add turkey sauage when we have it. Must avoid any pork due to my boyfriend being severely allergic to it.

    1. I happen to have a container of crumbled up blue cheese on hand. left overs from the burgers the other day. It was a good mix.

  4. Almost any mix of leftover meat and veg scramble up well with eggs and fit into a tortilla! (I don't eat cheese, which is good for breakfast tacos--leaves more for the cheese lovers to melt into their very own tacos.)

    1. I agree, any meat or veggies make a great breakfast taco mixed with scrambled eggs.

  5. Nice. We recently found some good gluten-free flour tortillas, so we've been having breakfast tacos and burritos again. I like to use up whatever leftover veggies and meats we have in the refrigerator. This morning, I added some leftover chopped baked potato.
